Potato Quesadilla with Cheddar Dipping Sauce

  1. Combine mashed potatoes with bacon and onions.
  2. Spread mashed potato mixture onto one side of half of your tortillas.
  3. Top with the remaining tortillas.
  4. Lightly butter each side of the quesadillas.
  5. Preheat a large skillet over medium heat.
  6. Place quesadilla into the preheated pan and cook until golden brown and crispy.
  7. Turn over and cook the other side.
  8. Repeat with remaining quesadillas.
  9. In a medium size bowl mix Ricos Aged Cheddar Condensed Cheese Sauce with sour cream.
  10. Cut quesadillas into quarter size pieces and serve with dipping sauce.
